1 1/4 pounds green beans
1 cup grainy mustard
(I like Eden Foods Organic Brown Mustard)
1 large shallot, chopped
1/2 cup rice wine vinegar
1/4 cup balsamic vinegar
2 tablespoons honey
2 cups walnut oil or canola oil
salt & pepper
Blanch green beans in a large pot of salted water until bright green and tender with a slight crunch, about 6ish minutes. Shock beans in a large bowl of ice water. Drain and dry well.
Blend together the mustard, shallot, vinegars, oil and honey. Season the dressing with salt and pepper. Add whatever amount of dressing that suites you to the beans and save the rest of the dressing in an airtight container for the next use.
